Sharptalon is a level 31 named blue hippogryph that roams the forests of Ashenvale. You can normally find it roaming the area south of Splintertree Post.
Killing it is one of the objects of the The Ashenvale Hunt. Once you defeat it and take its claw, you can turn it in to Senani Thunderheart at Splintertree Post.
An easy way to kill Sharptalon as a Horde player at a lower level: tap it, then run over to the Forsaken camp near the Dor'danil Barrow Den and have the guards kill it for you.
Broll's hippogryph is named this as well.
