Blood elves aren't the only ones whose racial mounts look like they were inspired by a Final Fantasy game. (And I've heard the same thing from others...so it's not just my opinion.)

Kinda late, I know, but I don't see any similarity whatsoever, except for the obvious elephantine traits. The elekk more resembles a mûmakil than anything else, except for the elephant, of course.
